Here are some ideas for accents on various races in the Redwall universe, these are not a must use and completely voluntary.
Moles speak with a slight slur to their words. To speak mole, you usually have to learn how to make that slur in a sentence. Example:
English: How are you doing, sir?
Mole: How be's you'm doen, zurr?
Also you must learn how to sound it out. Moles speak with a deepness in their throats, which if you imagine would be rusty or raspy.
English: I wish I could learn how to do that.
Mole: Oi wish Oi culd learn huw to do thart.
English: Very well, I suppose you are right.
Mole: Vury wull, Oi suppose you'm be's roight.
English: Where did that mouse go?
Mole: Whur did thart mousie go?
English: Sometimes I just want to strangle you.
Mole: Sumtoimes Oi just warnts to strangle yoi.
How to speak Otter
Otters speak with a sort of 'hey-ho' to their speech, giving them a cheerful reputation.
English: Yes, I suppose you are right.
Otter: Aye, I s'pose ye are right.
English: Fine weather we're having.
Otter: Fine weather we're having, eh?
English: So where'd you go off to?
Otter: So where'd ye go off to?
English: I think it's about time to leave.
Otter: I reckon 'tis 'bout time to leave.
How to speak Hedgehog
There are many ways that a Hedgehog speaks. They often speak like Mice and Squirrels but sometimes they have a unique dialect using 'thee thou and thy'.
English: How are you today?
Hedgehog: How art thou this day?
Something like that.

Squirrels are very much like hedgehogs. They sometimes use the thee and thou, other times they speak like mice.
How to speak Mouse
Mice speak in the same way squirrels do, with an English accent of a sort.
How to speak Badger
Well, mostly they let their weapons do the talking. Otherwise they speak like squirrels or mice. Except when in battle, when they're shouting 'Eulaliaaaa!'
How to speak Hare
Hares speak with a sort of British accent, and often talk of food, eating, and anything to do with scoff, wot!
English: Where's the food, sir?
Hare: Where's the blinkin' scoff, sah?
English: Ready to march, sir!
Hare: Ready to flippin' march, sah, as soon as mah belly's been filled, wot wot!!
English: Direct hit! Good shot!
Hare: Ha right on the button! Jolly good spike on the blighter, wot wot!

Corsairs speak like you would imagine they would.
English: Bring me some of that stuff, will you?
Corsair: Bring me some o' that stuff, will ye?
English: Where did my sword go, friend?

Corsair: Say that agin and I'll have t'gut ye!
